Simple, nutritious, warming and filling. Robust and wholesome vegan fuel.
3 heads broccoli
3 large zucchini
1 brown onion finely diced.
1 clove garlic grated.
Large handful fresh parsley.
3-4 cups filtered water.
1tbs Trocomare flavour.
1/2 avocado, salt to taste
Dice up all the vegetables. Gently heat some coconut oil in a large soup pot.
Sweat down the onions and garlic, then add the vegetables.
Lightly cook them on medium heat until well coated and heated through.
Top up with 3 cups water, half the parsley, trocomare and salt.
Bring to a gentle simmer for 5 mins then turn heat off.
Put the lid on and let sit for 15 mins.
The soup will continue to cook gently and develop its' flavour. Add fresh parsley, a little more water and salt if needed and blend in a vitamix until smooth.
Finally add the avocado and blend again until creamy.
Enjoy with hemp seeds and garlic bread crackers
